Jennifer Wiant for an inspired cassoulet, proving that the way to a cowboy's heart is through his belly. Cowgirl's too. The dish, perfectly rich, hearty, satisfying was juxtaposed against the iron of the Dutch oven, creating a memorable experience. The effects on the Roundup were like those of the many diners in "Like Water for Chocolate," laughter, tears and certain satisfaction. Check back for photos.
